How to use ginger in your ferments
Water kefir & Ginger root kefir — You can add ginger during either the first or the second fermentation. For the first fermentation, pop the ginger pieces into a tea infuser or paper tea filter to keep them separate from your kefir grains.
Kombucha — Add ginger only during the second fermentation, after you’ve set aside the SCOBY and starter liquid for your next batch. Adding ginger during the first fermentation can slow the growth of the kombucha culture and inhibit the formation of a new SCOBY.
